Ariège is traditionally a region of cheese, honey, mountain-cured pork, duck and foie gras but these days you'll also find more unusual products such as bison, ostrich, mohair wool, donkey's milk and hazelnut oil.

This part of the Pyrenees has always depended heavily on sheep and cow farming, notably Gascony cows and Tarascon sheep. More and more young farmers are converting to organic farming and you can buy their produce at at markets, direct from the farm or by mail order.
